The present invention relates to a method and an apparatus of extracting cold brew, and more particularly, to a method and an apparatus of extracting cold brew in which cold brew with a constant concentration and a constant flavor is always extracted by accurately and repeatedly controlling the rate and amount of extracting cold brew at predetermined intervals for each step during a predetermined time to be capable of providing a smooth taste and a rich flavor.
