FIELD: food industry.;SUBSTANCE: invention refers to the food industry, in particular to a method for manufacturing an air snack product by extrusion using a low viscosity of the supercritical medium. Extruder is fed with a mixture of shear thinning starch made of heat-sensitive ingredients which are hydrated and mixed with a supercritical medium of low viscosity.
