An engine speed control method and system for improving the performance of a running resistance evaluation of a hybrid electric vehicle are provided. The method includes determining if a vehicle meets a running resistance evaluation start condition. When the vehicle satisfies the running resistance evaluation start condition, the speed of a motor that sets an input speed of a transmission so as to be identical with an output speed of the transmission is set. A speed setting of the engine is then completed using the speed of the engine and the output speed of the transmission.
