PROBLEM TO BE SOLVED: To provide a novel X-prolyl dipeptidyl aminopeptidase derived from Lactobacillus gasseri.SOLUTION: X-prolyl dipeptidyl aminopeptidase is isolated from Lactobacillus gasseri such as Lactobacillus gasseri reference strain (L. gasseri ATCC33323). The peptidase acts on peptides comprising an X-prolyl dipeptidyl sequence having tyrosine or phenylalanine at the N terminus, and further hydrolyzes the dipeptide of the produced tyrosinyl proline (Tyr-Pro) or a phenylalanyl proline (Phe-Pro), resulting in production of tyrosine and phenylalanine.SELECTED DRAWING: Figure 7
