FRAGMENTED AGAVE FRUCTANS AND ITS OBTAINING PROCESS AT A PILOT AND INDUSTRIAL STAGE.

The present disclosure is related to products obtained by fractionation of a natural aqueous agave extract, consisting of branched agave fructans, separated by molecular chain size or polymerization degree, in two types: A) fructans mixture enriched with short chain fructans (fructo-oligosaccharides) with a polymerization degree of between three and 10 monomer units, and B) fructans mixture enriched with long chain fructans with an average polymerization degree greater than 10. The process, by which these products are obtained, uses two ultrafiltration stages and only one of nanofiltration. The products obtained have differentiated nutraceutical or functional properties, so they can be used as food supplements or as functional ingredients in the manufacturing of food and beverages or as components for pharmaceutical products.
