The invention relates to a plant ingredient for meat products and to a process for preparing the same. According to the invention, the ingredient comprises 17.39...17.48% lipids, 10.87...10.94% proteins, 0.28...0.6% mineral salts and, for the remainder, water, the percentage being expressed by mass. The process, as claimed by the invention, consists in hydrating a soy-bean proteinaceous isolate with water, in a ratio of 1:6, and gradually admixing 17% sunflower oil and 2.8...11.9% vegetable material such as dry tomatoes or red beet juice while continuously stirring up to complete homogenization, to result in a product which is refrigerated up to utilization in meat products in which it replaces 10, 15 or 20% of the meat mass.
