The present utility model provides an acid-modified sweet sorghum starch and process of making the same. The process of producing the acid-modified sorghum starch involves soaking sorghum flour with soaking solution, decanting excess soaking solution and adding water, extracting sorghum starch 3 times, sieving the supernatant containing the starch, adding water and letting starch settle, washing the starch again and letting it settle once more, decanting the water and collecting the settled starch, drying the starch, grinding and sieving the starch, soaking the starch in 0.14M HCl, heating the mixture and then cooling, adjusting the pH with 1M NaOH, letting starch settle, decanting excess water and washing the starch thrice, letting starch settle again before decanting excess water, collecting the starch and storing in refrigerated temperature, drying, grinding and sieving the starch to obtain the acid-modified sorghum starch.
