Manufacturing process tagatose using soy oligosaccharide

摘要

A method of producing tagatose comprising the following steps: a. separating soy oligosaccharide from by-products of whey soybean; b. hydrolyzing the soy oligosaccharide by using α-of free invertase galactosidase; c. isomerizing the hydrolyzed sugar solution by using arabinose isomerase to obtain the isomerized product comprising mixed sugar that contains sucrose, galactose and tagatose as major components; and d. separating the isomerized solution by chromatography.
