A method of producing an alcohol comprising: a) contacting a suspension comprising a starch substrate with at least one α-amylase that produces oligosaccharides; b) contacting the oligosaccharides with at least one glucoamylase and at least one phytase, where the phytase has at least 90% sequence identity with respect to the sequence of SEQ ID NO: 5, to produce fermentable sugars; c) ferment fermentable sugars in the presence of a fermentation organism to produce alcohol; and optionally d) recover the alcohol and / or dried and soluble distillery residues (DDGS).
