The present invention relates to a matrix membrane body comprising a liquid core medium (1) and a shell (2) which comprises one or more matrix membrane layers having alginate as the parent substance and which is suitable for consumption, wherein at least one matrix membrane layer contains between 1 and 20 percent by weight of irreversibly denatured protein. The present invention further relates to a method for producing the matrix membrane body according to the invention. The invention also relates to a device for producing the matrix membrane body according to the invention. The present invention therefore relates to a stable matrix membrane material containing between 1 and 20 percent by weight of irreversibly denatured protein and to a method for producing the matrix membrane material according to the invention. The present invention also relates to a method for coating solid media and surfaces with single- or multi-ply matrix membrane material having alginate as the parent substance, wherein at least one matrix membrane layer contains between 1 and 20 percent by weight of irreversibly denatured protein.
