The present invention relates to a method for contactlessly and non-destructively determining a proportion of at least one free fatty acid and/or at least one oxidation product on a surface of food or fodder (1), in which the surface of the food or fodder (1) to be examined is irradiated with electromagnetic radiation (3) having at least a first wave number from a region of the mid-infrared light and having at least a second wave number from the region of mid-infrared light by means of a radiation source (2). A proportion (4) of the electromagnetic radiation (3) which is diffusely scattered or reflected at the surface of the food or fodder (1) to be examined is directed onto a detector (5) and is detected in a time-resolved and/or spectrally resolved manner. An evaluation unit (6) is used to spectrally analyse this proportion with respect to the presence of at least one absorption line characteristic of the at least one free fatty acid or at least one absorption line characteristic of the at least one oxidation product.
