The present invention relates to a processing method for Seonji jelly and a Seonji jelly prepared by the processing method, and more specifically, to a processing method for Seonji jelly capable of automating the processing process of Seonji jelly used for cooking to thus supply Seonji jelly in a small package unit and produce a large quantity of Seonji jelly, and to a Seonji jelly produced by the processing method. The processing method of Seonji jelly according to the present invention comprises: a material stirring step in which cow blood or pig blood is placed with seasoning liquid in a stirrer and stirred; a boiling step in which the material stirred in the material stirring step is placed in a boiler and boiled at a temperature of 90-95C for 60-70 minutes; a refrigeration-aging step in which the processed material solidified in the boiling step is refrigerated and aged in a refrigerator at a temperature of 2-6C for 22-26 hours; a cutting step in which the aged Seonji jelly in the refrigeration-aging step is automatically cut into a small package unit; and a packaging step in which the Seonji jelly cut in the cutting step is packaged.
