The present invention relates to a method for manufacturing a red ginseng extract having an increased ginsenoside content, and a red ginseng extract and red ginseng processed-food manufactured thereby, the red ginseng extract having an increased ginsenoside content manufactured by pulverizing red ginseng into powder, aging the red ginseng powder to activate starch, and performing concentration through hot water extraction. The method comprises: a red ginseng preparation step (S10) of selecting, steaming, and drying fresh ginseng to prepare red ginseng; a red ginseng pulverization step (S20) of pulverizing the prepared red ginseng to manufacture pulverized red ginseng; a pulverized red ginseng aging step (S30) of aging the pulverized red ginseng; a hot water extraction step (S40) of mixing an extraction solution with the aged pulverized red ginseng to perform hot water extraction at 60 to 65C; a concentration step (S50) of concentrating a hot water extract extracted through the hot water extraction at 60 to 65C; and a concentrate aging step (S60) of aging a concentrate concentrated in the concentration step (S50) at a range of 65 to 55C for 3 to 4 days.
