The present invention relates to a method for producing expiration date-extended vegetable, and to expiration date-extended vegetable produced thereby. According to the present invention, the method for producing the expiration date-extended vegetable comprises the following steps: (A) primarily heating vegetable with superheated steam; (B) drying the heated vegetable; (C) soaking the dried vegetable into water; and (D) secondarily heating the vegetable with superheated steam after taking out the water-soaked vegetable. Thus, the vegetable produced thereby gets to have a long storage period since proliferation of microbes on the vegetable is avoided for a long time, and also has colors and gloss similar to home-cooked vegetables, while showing excellent textures.;COPYRIGHT KIPO 2017
