The present invention relates to a method for manufacturing a concentrated strawberry fruit drink with improved pigment stability and antioxidation ability, and specifically, to a method for manufacturing a concentrated strawberry fruit drink with improved pigment stability and antioxidation ability, comprising a step in which citric acid, acid sodium metaphosphate or a mixture thereof are mixed. The method for manufacturing the concentrated strawberry fruit drink can control the pigment stability and the antioxidation ability of manufactured concentrated strawberry fruit drink, and can easily improve storage properties and quality of a concentrated fruit drink, thereby providing convenience in processing and handling the concentrated fruit drink.;COPYRIGHT KIPO 2017
