The present invention relates to a method for preparing a hardly-digestible dried potato parenchyma cell material using an enzymatic alpha-glucan coating scheme. According to the present invention, the method, which is used for preparing a hardly-digestible dried potato parenchyma cell material using an enzymatic alpha-glucan coating scheme, includes the steps of: (a) dispersing the dried potato parenchyma cells into individual dried potato parenchyma cells; (b) mixing the dispersed dried potato parenchyma cells with a reaction solution and an alpha-glucan synthase to initiate an enzyme reaction; (c) recovering the potato parenchyma cells with the alpha-glucan coating from the enzyme reaction mixture treated with the alpha-glucan synthase; and (d) drying the potato parenchyma cells with the alpha-glucan coating obtained in step (c) to prepare a hardly-digestible dried potato parenchyma cell material. The present invention treats the dried potato parenchyma cells containing raw starch or aged starch with the alpha-glucan synthase in order to lower the digestion characteristics of the dried potato parenchyma cells to lower the resistance of the consumers against the dried potato parenchyma cells, enhances the utilization thereof in food industries, and saves energy without additional smoothing processes for the dried potato parenchyma cells while obtaining high yields.;COPYRIGHT KIPO 2017
