According to an embodiment of the present invention, provided is a method for producing a spring onion extract. The method comprises the steps of: producing a spring onion extract-containing reactant liquid by enzymatically reacting a mixture liquid including water, finely cut spring onion, and pectinase at 25-50°C for 1-6 hours; heating the spring onion extract-containing reactant liquid at a temperature of 90-110°C for 1-6 hours; and removing residues by filtering the heated spring onion extract-containing reactant liquid, and obtaining a spring onion extract-containing filtrate. When a spring onion extract is produced through the method of the present invention, bad smells such as soil smells and the like and bitter tastes and the like of spring onion are removed, and at the same time cool tastes are improved. Thus, functional properties are improved. Accordingly, a seasoning material produced through the method of the present invention by mixing a spring onion extract, maltodextrin, salt, and the like can be used as a basic raw ingredient of instant noodle seasoning soup, stock, condiments, seasonings, and the like.;COPYRIGHT KIPO 2017
