The present invention relates to a real-time monitoring and automatic control system for a food waste fermentation-extinction device and, more specifically, relates to a real time monitoring and automatic control system for a food waste fermentation-extinction device, capable of automatically controlling proper operation for fermentation by comparing a real time monitored sensor value with a preset operation range value, stored in a management server, and delivering control information about a fermentation-extinction operating part, automatically controlled in accordance with the operation range value, to a manager or user wirelessly or by wire. According to the present invention, the real-time monitoring and automatic control system for a food waste fermentation-extinction device includes: a monitoring part monitoring an internal environment of a fermentation tank; a fermentation-extinction operating part controlling the internal environment of the fermentation tank; an automatic control part receiving a sensor value from the monitoring part; and a management server receiving and storing the sensor value from the automatic control part, and transmitting control information to the automatic control part.
