The present invention provides a method to manufacture a fermented tea with moringa and pine mushroom. The method includes: a step of collecting moringa leaves; a step of washing the collected moringa leaves in clean water and dehydrating the leaves; a primary roasting step of roasting the dehydrated leaves in a roasting pot at 80-90C for 5-10 minutes and rubbing the leaves at room temperature for 10-15 minutes, and then, drying the leaves in the shade for 1-2 days; a secondary roasting step of roasting the primarily roasted leaves in the roasting pot at 200-250C for 5-10 minutes and rubbing the leaves at room temperature for 10-15 minutes, and then, drying the leaves at room temperature for 10-25 minutes; a tertiary roasting step of roasting the secondarily roasted leaves in the roasting pot at 100-200C for 30-40 minutes and rubbing the leaves at room temperature for 10-15 minutes, and then, drying the leaves at room temperature for 10-25 minutes; and a step of drying the tertiarily roasted leaves at room temperature to achieve a moisture content of 4-6%. As such, the present invention is capable of improving consumer preference by reducing a bitter taste of moringa leaves and making the leaves taste better as well as expanding their range of purpose by using the moringa leaves as an ingredient for a secondary process since the present invention is able to indicate a similar shape to fresh moringa leaves when the moisture content is increased.
