The present invention relates to a salting solution including foremost mugwort and a salting method using the same, capable of maintaining and improving nutrients and flavors of marine products and increasing a storage period with the maintenance of the freshness of the marine products by drying the marine products after soaking the products in the salting solution including foremost mugwort. Effective components of foremost mugwort suppress the activation of bacteria or harmful enzymes and control decomposition or acidification, and thus, freshness is maintained for a long period, so the storage period can be increased more than with existing methods. The present invention is capable of preventing the oxidization of lipids as well as the degeneration of protein, thereby maintaining an excellent texture of food even after long storage as well as maintaining unique flavors and nutrients of marine products while reducing fishy odors.
