PROBLEM TO BE SOLVED: To provide a citrus fruit-like flavor composition with enhanced residual amount of citral.;SOLUTION: This invention relates to a citrus fruit-like flavor composition, comprising citral and a citral-degrading inhibitor, wherein the citral-degrading inhibitor is made of: an olive fruit extract; or a mixture of the olive fruit extract and one or more selected from a bilberry extract, an amla extract, a rubus extract, a red wine broth extract, and a cranberry extract. In the citrus fruit-like flavor composition, formula 1: X/Y≥0.12 is satisfied, provided that: a residual amount (mg/L) of citral is "Y" when the citrus fruit-like flavor composition is stored for one week at 4°C (atmospheric pressure); and a residual amount (mg/L) of citral is "X" when the citrus fruit-like flavor composition is stored for one week at 37°C (atmospheric pressure).;SELECTED DRAWING: None;COPYRIGHT: (C)2018,JPO&INPIT
