The present invention relates to industrial processes for the preparation of precooked pasta. The method comprises the successive steps of: (a) provided with a shaped pasta dough, wherein the shaped pasta dough is a freshly extruded pasta dough; (b) steaming the shaped pasta dough for about 1 minute to about 5 minutes at a temperature of about 82 ° C, thereby obtaining a steamed preformed pasta dough; (c) boiling the steamed preformed pasta dough by immersing it in boiling water, thereby obtaining a freshly pre-cooked pasta; and (d) cooling the pre-cooked pasta.
