More specifically the present invention further relates to a composition comprising seed extracts of Macrotyloma uniflorum along with acceptable excipients for delaying ripening and increasing shelf life of tomatoes. The present invention further relates to a process for preparing the composition containing seed extracts of Macrotyloma uniflorum along with acceptable excipients for delaying ripening in fruits.
