The present invention relates to a composition comprising of seed extracts of Macrotyloma uniflorum along with acceptable excipients for delaying ripening in fruits and vegetables. The present invention also relates to a composition comprising seed extracts of Macrotyloma uniflorum along with acceptable excipients for increasing shelf life of fruits and vegetables. More specifically the present invention further relates to a composition comprising seed extracts of Macrotyloma uniflorum along with acceptable excipients for delaying ripening and increasing shelf life of tomatoes. The present invention further relates to a process for preparing the composition containing seed extracts of Macrotyloma uniflorum along with acceptable excipients for delaying ripening in fruits.
