The present invention relates to a process for extracting coconut fat and the product obtained, which application area is chemistry, in alternative separation processes for obtaining bioactive compounds or value-added harmless substances. The processes with supercritical extraction use temperature conditions for maintaining the bioactive compounds that with other methods it is not possible to preserve. Additionally, the solvent (CO2) under pressure depressurization conditions and at room temperature is in a gaseous state, being insoluble and removed from the extract obtained without the need to add more unit operations.
