The present invention describes the process of production of green wine, using flowers of Castiva SATIVA MILL. AS ANTIOXIDANTS AND ANTIMICROBIAL AGENTS, ALTERNATIVE TO THE USE OF SULPHITES. FACE TO THE LEGISLATIVE RESTRICTIONS THAT HAVE BEEN APPLIED TO THE USE OF SYNTHETIC ADDITIVES IN THE FOOD INDUSTRY DUE TO THE HEALTH RISKS ASSOCIATED WITH ITS INGESTION, OPEN NEW WAYS FOR THE USE OF NATURAL SOURCES OF BIOATIVES WITH REDUCTION OR NO TOXICITY, AND THAT THEY HAVE BETTER ACCEPTANCE BY CONSUMERS. AMPLELY DESCRIBED BY ANTIOXIDANT AND ANTIMICROBIAL ACTIVITIES, THE FLOWERS OF CASTANEA SATIVA WERE SELECTED FOR INCORPORATION IN GREEN WINE BY THE INDEPENDENT PRODUCER FERNANDO MAGALHÃES PINTO PAIVA. THE FLOWERS WERE ADDITIVED DIRECTLY TO WINE WHEN THEIR PRODUCTION PROCESS ALTERNATIVE TO THE ADDING OF SULPHITES, KEEPING ALL THE REMAINING PROCESS UNALTERTABLE. BEFORE THE ANALYZES CARRIED OUT, THE ADDITION OF FLOWERS OF CASTANEA SATIVA CONFERRED TO THE WINE PRESERVING PROPERTIES, WITHOUT CHANGING THEIR PHYSICO-CHEMICAL AND SENSORY PARAMETERS. THE MAJOR ADVANTAGE OF THIS PROCESS IS THE COMPLETE ELIMINATION OF THE USE OF SYNTHETIC PRESERVATIVES, ESPECIALLY SULPHITES, ALLOWING THE CONSUMER, ENJOYING A PRODUCT HIGHLY APPRECIATED WITH QUALITY AND MORE IMPORTANT, WITH SAFETY, ALSO GETTING MORE VALUES OF OTHER BIOATIVE PROPERTIES CONFERRED TO WINE FOR THE PRESENCE OF THE FLOWERS OF CASTANEA SATIVA.
