the present work deals with a comparison of selected types of biochemical tea (camellia sinensis) market in tunisia and as a substitute for local (cistus salvifolius) located in the region of(e mograne - zaghouan (study area).the study of the chemical compounds in different samples was performed to determine the extent of the following compounds: total lipids, fatty acids, polyphenols and tannins.the antioxidant activities were carried out by the study of polyphenols.the analysis results showed that cistus salvifolius can substitute for tea trade because of their similarity in the development of polyphenols which induced effectsfs on human health.an abundance of cis oleic acid (omega 9 which has an effect on the prevention of cardiovascular disease (cvd), keto acid and arachidonic acid.was observed in the tested samples.this was illustrated by a tasting of the two samples of cyst (with mint and the other without.) we showed that there was a high degree of willingness on the part of consumers (87%)the acquisition and use of this herbal tea with a willingness to pay after tasting 1.23 8 dt / 100g is higher than before. on dt / 100g.therefore, the use of tea leaves and tea is usually substituante is approved.
