The present invention falls within the agri-food sector and more particularly within the meat industry sector. Specifically, the invention relates to emulsions and microcapsules of fish oil, rich in omega-3 fatty acids and their use in the preparation of food compositions such as meat products or other solid foods that have improved nutritional properties.
