Method of manufacturing a fraction of palm oil that practically does not contain esters of 3-monochloropropanediol fatty acids (esters of 3-MCPD), wherein said process comprises: - the fractionation of a crude palm oil with a fatty acid content free of less than 1.5% and a diglyceride content of less than 5.5% by weight to produce at least a fraction of crude palm oil, wherein said fraction of crude palm oil is selected from crude palm olein with a value of iodine of at least 55 and of raw palm stearin with an iodine value of less than 48; and - the deodorization of the crude palm oil fraction to produce a deodorized palm oil fraction with an ester content of 3-MCPD of less than 1 ppm.
