An isolated amidase enzyme capable of degrading ochratoxin, comprising a polypeptide sequence having the sequence of any one of SEQ ID NO: 1, SEQ ID NO: 3, or SEQ ID NOs: 5-11, 13, 14 or 15, or a sequence that has at least 70% identity with any one of SEQ ID NO: 1, SEQ ID NO: 3 or SEQ ID NOs: 5-11, 13, 14 or 15; or a polypeptide that is produced by the expression of a polynucleotide comprising the sequence of SEQ ID NO: 2 or a sequence that has at least 70% identity thereto, or a polynucleotide that differs from SEQ ID NO: 2 because to the degeneracy of the genetic code; or a sequence that hybridizes under stringent conditions with the complement of SEQ ID NO: 2 or a sequence that has at least 70% identity with it.
