Denatured whey protein compositions with high protein content, containing caseinomacropeptides, products containing them and uses thereof

A denatured whey protein composition, which contains: - a total amount of protein of at least 60% (w / w) on a dry weight basis, - a total amount of caseinomacropeptide (CMP) of at least 16% ( w / w) with respect to the total amount of protein, - insoluble milk whey protein particles having a particle size in the range of 1-10 μm, wherein the amount of said insoluble milk whey protein particles is in the range of 50-90% (w / w) with respect to the total amount of protein.
