An ultrafine polarization-maintaining optical fiber for use in a fiber optic gyroscope and a manufacturing method for the optical fiber: manufacturing an optical fiber preform by controlling an optical fiber preform process parameter; in a drawing process, employing diameter feedback control and automatic speed adjustment to implement precision control of the diameter of an ultrafine polarization-maintaining optical fiber cladding layer and, at the same time, by employing a technique for controllable coating layer diameter per coating material temperature to implement precision control of the diameter of an ultrafine polarization-maintaining optical fiber coating layer; the ultrafine polarization-maintaining optical fiber is a panda-type shielded optical fiber, the working wavelength thereof is 850 nm, the diameter of the ultrafine polarization-maintaining optical fiber cladding layer is 60 μm, and the diameter of the ultrafine polarization-maintaining coating layer is 100 μm.
