The present invention relates to a manufacturing method of high quality red bellflower roots which comprises a first steaming step of steaming bellflower roots at 60 to 120C for 2 to 24 hours in the relative humidity of 90 to 110%, and a first drying step of inserting the firstly steamed bellflower roots into a dryer, and drying the bellflower roots at 30 to 100C for 6 to 72 hours; and to red bellflower roots manufactured by the method. According to the present invention, red bellflower roots with improved flavor and functionality and the increased contents of crude saponin can be produced.
