The present invention is to provide a quality management method of butchered chickens capable of improving working efficiency by automatically sorting normal products or defective products with respect to butchered chickens. A quality management method of butchered chickens according to the present invention comprises the following steps: (a) calculating basic data of a transfer vehicle of butchered chickens and storing the same in database; (b) calculating measurement data of each butchered chicken and storing the same in database; and (c) sorting and separating defective products among the butchered chickens based on the basic data and the measurement data.
