Metabolite marker for identifying raw material of fermented red pepper paste and use thereof

The present invention relates to a metabolite marker for identifying raw materials of red pepper paste and uses thereof. It was confirmed that metabolites show a sharp difference between red pepper paste by performing metabolite profiling with respect to red pepper paste manufactured by combining three grain raw materials and three red pepper raw materials, and the red pepper paste can be identified according to grain or red pepper raw materials by using multivariate statistical analysis with respect to the metabolites. Accordingly, the metabolite marker of the present invention can be usefully used for distinguishing types of red pepper raw materials.
