The present invention relates to cheonggukjang, and more particularly, to a method for manufacturing cheonggukjang using embryo bud of rice, which can produce cheonggukjang having more excellent nutrients and having good taste and smell with reduced smell specific to the cheonggukjang, and to the cheonggukjang manufactured thereby. According to the present invention, provided are: the method for manufacturing cheonggukjang using embryo bud of rice, which comprises the following steps: washing and soaking soybeans; boiling the soaked soybeans; steaming the embryo bud of rice; drying the steamed embryo bud of rice; laying the dried embryo bud of rice steamed and dried with the boiled soybeans and injecting Bacillus subtilis; and fermenting injected Bacillus subtilis; and the cheonggukjang manufactured thereby.;COPYRIGHT KIPO 2018
