The present invention relates to a method for manufacturing perilla oil, which comprises the following steps: a perilla seed moisture content controlling step for immersing perilla seeds in distilled water to adjust the water content of the perilla seeds to 2 to 8 wt% based on the total weight; a freezing step for packing the perilla seeds with the moisture content controlled and freezing the perilla seeds at the temperature of -25 to -18°C; a thawing step for thawing the frozen perilla seeds at the temperature of 3 to 5°C; a repeating step for repeating the freezing and thawing steps one to five times; and a milking step for milking the perilla seeds which passed through the repeating step at the pressure of 550 to 600 kgf/cm^2 at the temperature of 0 to 40°C, and specifically, to the method for manufacturing perilla oil, which has improved yield and quality, and to the perilla oil obtained using the same.
