The present invention relates to a premix composition for preparing muffins with excellent storage stability and soft and moist texture; a preparation method of muffins using the composition; dough for preparing muffins obtained by mixing the above composition; and muffins prepared using the composition. The present invention provides muffins which have increased water retention to have a soft and moist texture, have a significantly low water activity, and have decreased content of fermentable saccharides to increase the stability to microorganisms.;COPYRIGHT KIPO 2018
