The present invention relates to a method for culturing low nitric acid content vegetables, comprising the steps of: seeding vegetable seeds and producing seedlings with a low nitric acid hydroponic liquid; culturing the seedlings produced in the seedling stage with a nitric acid containing hydroponic liquid; and culturing the vegetables, cultured using the nitric acid containing hydroponic liquid, by using a low nitric acid hydroponic liquid to culture low nitric acid content vegetables. According to the method for culturing low nitric acid content vegetables, low nitric acid content vegetables having low nitric acid content can be stably produced. In addition, the low nitric acid vegetable according to the method of the present invention can be safely introduced into a diet without worrying about excessive intake of nitrate.
