The present invention relates to a method for preparing a natural seasoning and to a natural seasoning prepared by the method, and more specifically, to a method for preparing a natural seasoning by subjecting Lentinula edodes and Saccharina japonica to vacuum low-temperature drying treatment, and to a natural seasoning prepared by the method. The method for preparing the natural seasoning of the present invention enables nutrients and functional ingredients of the Lentinula edodes and Saccharina japonica to be contained as they are, wherein the method can improve the functionality and palatability while utilizing the flavor and taste inherent in the ingredients, and can be widely used for the production of well-being foods because no harmful food additives are contained at all.
