A pastry dough processing method and a processing device thereof are disclosed. The pastry dough processing method according to the present invention includes the following: a sheet molding process of molding a dough sheet by processing dough into a sheet form; a sheet pressing process of pressing the dough sheet so that the dough sheet has desired elasticity and thickness; a separating process of separating a product forming unit for making pastry from the dough sheet; and A scrap recycling process of recovering scraps of the dough sheet which has been separated from the product forming unit in the separation process, and conveying the scraps to the sheet molding process so as to mold an intermediate layer of the dough sheet.
