The present invention relates to a method for preparing mullet (mulgil cephalus linnaeus) cake and mullet cake thereby. The method for preparing mullet cake comprises the steps of: depositing mullet meat in ginger wine including salt and pepper powder in order to remove soil smell from the mullet and cooling and aging the mullet meat; mixing onion, red pepper, hot pepper, carrot, egg white, sugar and starch therewith to make dough; slowly adding ice water thereto again to make dough; forming the dough in a predetermined shape; and boiling the formed dough. The present invention provides the method for preparing mullet cake, which effectively removes the soil smell from the mullet to effectively enhance a flavor and a texture of the fish cake, thereby remarkably increasing consumption of the mullet which people intend to avoid because of the soil smell to effectively solve financial difficulty of mullet fishing villages or mullet culture companies, and manufactures high quality fish cake to enable a user to enjoy excellent flavor and texture.
