The invention relates to a process for obtaining stable microcapsules (m) from the preparation of the probiotic microorganism (1) and from the wall materials, rice bran protein (3) and maltodextrin (5). followed by the processing of the obtained mixture (s), its homogenization (e7) and spray drying (e8); for microencapsulation of probiotic microorganism, such as lactobacillus acidophilus (1); whose wall consists of the combination of rice bran protein (3) and maltodextrin (5). The obtained microcapsules (m) have spherical surfaces without cracks or deformations and, because they are biodegradable and biocompatible, are used as protectors of probiotic microorganisms that can be applied to different food matrices.
