The present invention aims at the utilization and better destination of plant materials in the industrial production of fermented dairy products, besides improving the nutritional value and providing greater aggregation and functional appeal. The product is characterized as a symbiotic fermented dairy derivative, ie with the addition of prebiotic and probiotic ingredients and has the potential to be commercially produced and exploited by the food processing industry, especially the dairy industry.
