摘要

The present invention consists in a reactor scaled up to the industrial phase, which is intended to obtain chitin and other value added products by means of a biological treatment of shrimp wastes, where Lactobacillus plantarum is used as inoculate, the reactor having an operation capacity of 2,500 kg of wastes. The process is performed by carrying out a deproteinisation and a demineralisation, allowing high molecular weights to be preserved in chitin and high yields in astaxanthin.
