摘要

The invention refers to a process for obtaining a powder in spherical-shaped aggregates resulting from Colocasia esculenta L. starch, which were obtained without the addition of external binding agents. The aggregates are formed by small pellets with a low content of amylose (0.1%), these preserving the crystalline structure thereof verified by an X-ray diffraction pattern of the A type, showing a behavior suitable to form a paste and be gelatinized, which may be used for encapsulating ingredients.
