The present invention provides a method for determining the shelf life of a flexibly-sterilized conditioned fruit and vegetable dish by combining low-field nuclear magnetism with an electronic nose and belongs to the field of fruit and vegetable food processing. The shelf life of the fruit and vegetable dish is determined by pretreatment, flexible sterilization, index measurement, dynamic model establishment, and model verification and evaluation. A dynamic model with an electronic nose response value and bound water content is established, and a shelf life model of the flexibly-sterilized conditioned fruit and vegetable dish is established according to the dynamic model. By using the method, the shelf life of a flexibly-sterilized conditioned fruit and vegetable product can be rapidly and effectively predicted within the range of 4 to 28 °C, the quality of the flexibly-sterilized conditioned fruit and vegetable dish in the processes of production, transportation, storage and sale can be monitored, and a reference can be provided for producers and consumers.
