Usage: the invention relates to biotechnology and medicine, and specifically to methods for the enzymatic hydrolysis of high molecular-weight natural polymers, and can be used in medicine, agriculture, pharmaceutics and cosmetics. Goal: developing a novel method for the enzymatic hydrolysis of a high molecular-weight natural polymer using auto-fermentation while creating optimal conditions for an enzyme-substrate reaction to take place. Essence of the invention: a method for the enzymatic hydrolysis of a high molecular-weight natural polymer, including a preparatory stage involving adding distilled water and heating a homogenate, carrying out hydrolysis while constantly stirring, and judging the quality of a produced hydrolyzate, in which, according to the invention, the high molecular-weight natural polymer is honey, into which 80% purified water is added from the total volume of water to be added, the temperature is brought to 35-40°С and the pH of the homogenate is brought to 6.0, after which, with vigorous stirring and a pH of 6.0, the temperature is increased to 45°С, every ten minutes over the course of 50-60 minutes the pH value is corrected until a stabilized pH value of between 4.5 and 5.0 is reached, the resulting hydrolyzate is cooled to room temperature, stirred, and has ethyl alcohol, in a quantity of 2% of the total volume, added thereto as a stabilizer, the remainder of the water is added, stirred and let sit for 60 minutes, the resulting concentrate of de-enzymed honey is filtered, poured into containers and autoclaved at a temperature of 110°С.
