The present utility model discloses a method of preparing a leche flan enriched with fish protein concentrate and seaweed (Eucheuma sp.) comprising the steps of; cleaning dried seaweed, blending the clean seaweed, washing bones of a fish, pressurizing, drying and pulverizing the fish bones into fish protein concentrate, measuring the seaweed, fish protein concentrate, eggs, condensed milk, evaporated milk and refined sugar I desired amounts, mixing altogether the measured ingredients except the refined sugar, melting the refined sugar in saucepan, pour the melted sugar into a molder, adding and steaming the mixture into the molder with the melted sugar, to define the leche flan.
