The present utility model discloses the PROCESS of a steamed moril1ga oleifera rice cake with sweet potato jam filling which is healthier, tastier, more affordable, and easier to prepare. The rice cake comprises powdered rice, minced moringa oleifera leaves, grated sweet potato, granulated sugar, baking powder, coconut milk, condensed milk, eggs, vanilla, honey and butter.The said process comprises the following: washing about a kilo of sweet potatoes; boiling unpeeled sweet potatoes; peeling off the skin of said sweet potatoes; grating of said sweet potatoes; melting butter in a large pan using medium fire; adding coconut milk, condensed milk and honey to the melted butter to form a mixture; simmering the butter, coconut milk, condensed milk and honey to the melted butter for 3 minutes; putting the grated sweet potatoes in the butter, coconut milk, condensed milk and honey mixture; stirring continuously said mixture to form a jam; testing the stickiness of a jam; setting aside the jam in a dry place to cool; washing and draining moringa oleifera leaves; mincing the moringa oleifera leaves; extracting juice from the minced moringa oleifera leaves by wringingú into a clean cloth and set aside; sifting powdered rice, granulated sugar, and baking powder; adding on Water to the sifted rice, sugar and baking powder; mixing all together the sifted rice, sugar and baking powder; whisking eggs in high speed; adding sugar while continue whisking to achieve desired stiffness; folding the whisked eggs; adding vanilla syrup and minced moringa oleifera into the mixture; adding 3 tbsp of mixture with eggs, vanilla syrup and minced nioringa oleifefa leaves in a desired molder; adding 1 tbsp of sweet potato jam in the mixture, and 1 tbsp. of mixture on top of the sweet potato jam in the molder; stacking the filled molders in a steamer; placing clean cloth on top of the steamer and cover; steaming for 10-15 mins with medium fire; testing the cake using toothpick.
