Disclosed in the invention are a multi-segment control coil wire winding structure of an electromagnetic heating appliance and an electromagnetic heating appliance. The multi-segment control coil wire winding structure comprises: a top wire winding disc assembly (1), a side wire winding disc assembly (2) and a bottom wire winding disc assembly (3). The bottom wire winding disc assembly (3) comprises a bottom wire winding support (31), an R corner wire winding support (32) arranged on the rim of the bottom wire winding support (31), a bottom coil (33) wound on the bottom wire winding support (31) and an R corner coil (34) wound on the R corner wire winding support (32). The bottom coil (33) and the R corner coil (34) are controlled by a controller to work independently. The top wire winding disc assembly (1) comprises a top wire winding support (11) and a top coil (12) wound on the top wire winding support (11). The side wire winding disc assembly (2) comprises: a side wire winding support (21) and a side coil (22) wound on the side wire winding support (21). The top coil (12) and the side coil (22) are controlled to work uniformly by the controller. The present solution has advantages of accuracy control, uniform heating, high efficiency, long service life, etc.
